  • 4 cups powdered sugar
  • 3 cups semi-sweet chocolate chips
  • 2 tablespoons shortening or coconut oil
  • 30 candied cherry halves

Instructions

  1. In a bowl, combine finely chopped pecans and fruit juice. Let this mixture sit for at least 1 hour or overnight for best flavor.
  2. In a large mixing bowl, beat softened butter with powdered sugar until smooth.
  3. Stir in the pecan mixture and chopped maraschino cherries until evenly combined.
  4. Shape the mixture into 1-inch balls and refrigerate for at least an hour.
  5. Melt semi-sweet chocolate chips with shortening or coconut oil in a saucepan over low heat, stirring frequently.
  6. Using forks or toothpicks, coat each ball in melted chocolate and place them on parchment paper-lined baking sheets. Top each with a candied cherry half before the chocolate sets.
  7. Refrigerate until firm.
