  • 2 medium zucchinis
  • 4 cloves garlic
  • 4 tablespoons extra-virgin olive oil
  • 2 oz mozzarella cheese
  • 1 oz Parmesan cheese
  • Fresh basil
  • Kosher salt
  • 1/4 teaspoon crushed red pepper flakes

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice each zucchini in half lengthwise, score the flesh side, and sprinkle with salt. Let sit for 15 minutes.
  3. In a skillet over medium heat, sauté chopped garlic and red pepper flakes in 2 tablespoons of olive oil until fragrant (about 1-2 minutes), then set aside.
  4. Wipe excess moisture from zucchini and cook cut side down in the skillet with remaining olive oil until golden brown (about 2-3 minutes). Transfer to a baking sheet.
  5. Brush zucchini with garlic oil mixture and bake for 8-10 minutes until tender. Top with mozzarella and Parmesan cheese and broil for another 2-3 minutes until bubbly.
  6. Serve garnished with fresh basil.
