  • 2 large eggs
  • 2 teaspoons vanilla extract

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons chai spice blend
  • 1/4 cup granulated sugar mixed with 1 tablespoon ground cinnamon (for coating)

Instructions

  1. In a medium bowl, whisk together flour, cream of tartar, baking soda, salt, and chai spice blend. Set aside.
  2. In a large bowl or stand mixer, cream softened butter with granulated and brown sugars until light and fluffy (about 3–4 minutes).
  3. Beat in eggs one at a time, then add vanilla extract; mix until combined.
  4. Gradually incorporate dry ingredients into wet ingredients on low speed until just combined.
  5. Cover dough and chill in the refrigerator for at least one hour.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll chilled dough into 1-inch balls, then coat each ball in cinnamon-sugar mixture.
  8. Place coated balls on prepared baking sheets about 2 inches apart.
  9. Bake for 10–12 minutes until edges are lightly golden but centers are soft.
  10. Cool on baking sheet for about 5 minutes before transferring to wire rack.
