  • 3/4 cup finely grated carrot (23 medium carrots)
  • 1/3 cup shredded sweetened coconut
  • For the Cream Cheese Buttercream: 1/2 cup unsalted butter, softened
  • 1/4 cup cream cheese, chilled
  • 2 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon heavy cream

Instructions

  1. Prepare the dough: Brown unsalted butter in a saucepan and combine with sugars and egg. Mix in vanilla.
  2. Mix dry ingredients: Whisk together flour, oats, baking soda, cinnamon, ginger, nutmeg, and salt. Gradually add to wet mixture until just combined.
