  • 4 pounds beef short ribs
  • 1 cup soy sauce
  • ½ cup brown sugar
  • ¼ cup rice vinegar
  • ¼ cup hoisin sauce
  • 1 tablespoon minced ginger
  • 1 tablespoon minced garlic
  • 2 tablespoons sesame oil
  • 1 tablespoon chili paste (optional)
  • 1 teaspoon black pepper
  • 2 green onions, chopped
  • Sesame seeds

Instructions

  1. Rinse the beef short ribs under cold water and pat dry.
  2. In a large bowl, whisk together soy sauce, brown sugar, rice vinegar, hoisin sauce, ginger, garlic, sesame oil, optional chili paste, and black pepper.
  3. Place short ribs in a resealable bag or bowl; pour marinade over and refrigerate for at least 2 hours (overnight is best).
  4. Preheat oven to 325°F (160°C).
  5. Sear marinated short ribs in a skillet over medium-high heat until browned on all sides (about 3-4 minutes per side).
  6. Transfer seared beef to a roasting pan; pour remaining marinade over ribs.
  7. Cover the pan with aluminum foil and roast for about 3-4 hours until fork-tender.
  8. For caramelization, remove foil during the last 30 minutes of cooking.
  9. Once cooked, let rest for 10-15 minutes before slicing; garnish with green onions and sesame seeds.
