  • 4 chicken thighs (bone-in, skin-on)
  • 1 tablespoon vegetable oil
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon minced ginger
  • 4 cloves minced garlic
  • 2 cups chicken broth
  • 2 cups jasmine rice
  • Salt and pepper, to taste
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch (optional, for thickening)
  • Chopped green onions for garnishing
  • Fresh cilantro for garnishing

Instructions

  1. Pat chicken thighs dry and season with salt and pepper.
  2. In a large pot, heat vegetable oil over medium-high heat. Sear chicken skin-side down for 5-7 minutes until golden.
  3. Flip the chicken and add soy sauce, brown sugar, garlic, and ginger. Stir to combine.
  4. Pour in chicken broth to cover the chicken completely. Bring to a gentle boil, reduce heat, cover, and simmer for about 20 minutes until tender.
  5. Meanwhile, rinse jasmine rice under cold water until clear. Cook rice in a separate pot with 4 cups of water; bring to a boil then cover and reduce heat for 15-20 minutes.
  6. For a thicker broth (optional), mix cornstarch with water to create a slurry and stir into the broth for an additional few minutes.
  7. Serve sliced chicken over rice with broth ladled on top and garnish with chopped green onions and fresh cilantro.
