  • 1 head of garlic
  • 3 tbsp olive oil
  • 50g (1/4 cup) butter
  • 90g (1/3 cup) warm milk
  • 200g (1 1/2 cups) all-purpose flour
  • 200g (2 cups) mozzarella cheese
  • 2 egg yolks
  • Sprinkle of salt
  • 1 tbsp honey
  • 50g (1/2 cup) bread flour
  • 20g (3 tbsp) milk powder (optional)
  • 25g (2 tbsp) butter
  • 1 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1 egg

Instructions

  1. Preheat oven to 160°C (320°F). Roast the garlic head wrapped in foil for about 2 hours until soft.
  2. Mix softened roasted garlic with butter and parsley to create garlic butter.
  3. Combine warm milk, yeast, and honey in a bowl; let it froth for 10 minutes.
  4. In a mixing bowl, combine flours, sugar, salt, butter, egg yolks, and the yeast mixture.
  5. Knead the dough using a dough hook on medium speed for about 15–20 minutes until smooth.
  6. Let the dough proof in a warm place for about 1 hour and 30 minutes until doubled in size.
  7. Roll out the dough and spread garlic butter over it. Sprinkle with mozzarella cheese and roll tightly into a log.
  8. Cut into six pieces and let them proof on a baking sheet for another 30 minutes.
  9. Preheat oven to 175°C (350°F), brush rolls with egg wash, then bake for about 20–25 minutes until golden brown.
