  • 1.5 cups fresh chopped tomatoes
  • 1/2 yellow onion
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 lb pasta
  • 1/3 cup reserved pasta water

Instructions

  1. Preheat the oven to 450°F (232°C) and line a baking sheet with parchment paper.
  2. Spread the frozen butternut squash, chopped tomatoes, and sliced onion on the baking sheet.
  3. Drizzle with olive oil, season with salt, black pepper, and thyme; toss to coat.
  4. Roast for 20 minutes until tender and slightly caramelized.
  5. Cook pasta according to package instructions, reserving 1/3 cup of pasta water before draining.
  6. Blend the roasted vegetables with the reserved pasta water until smooth.
  7. Combine the sauce with cooked pasta, tossing gently to coat.
