  • 1 Tablespoon olive oil
  • 1 pound ground beef
  • 1 cup chopped white onion
  • 1 can refried beans
  • 2 Tablespoons lime juice
  • ½ cup chopped cilantro
  • 2 Tablespoons taco seasoning
  • 1 cup sour cream
  • 1 can cream of mushroom soup
  • 10 flour tortillas, cut in half
  • 3 cups shredded Mexican cheese

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a 9×13 casserole dish with cooking spray.
  2. In a large skillet, heat olive oil over medium heat. Add ground beef and onion; cook until meat is browned (about 8 minutes).
  3. Stir in refried beans, lime juice, cilantro, and taco seasoning; mix well.
  4. In a mixing bowl, whisk together sour cream and cream of mushroom soup until smooth.
  5. Spread half of the sour cream mixture on the bottom of the greased casserole dish.
  6. Layer six halved tortillas over the mixture, followed by half of the beef mixture and one cup of cheese.
  7. Repeat layering with remaining ingredients: sour cream mix, tortillas, beef mixture, and finish with cheese.
  8. Bake for about 20 minutes until cheese is melted and bubbly.
