  • 1 pound beef or turkey breakfast sausage
  • 1/4 cup salsa
  • 12 cups potatoes o’brien (with onions and peppers)
  • 8 flour tortillas (8-inch)
  • 6 large eggs
  • 1 1/4 cup half-and-half
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon kosher salt
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat your oven to 350°F and spray a baking dish with nonstick spray.
  2. In a frying pan over medium-high heat, brown the sausage until fully cooked; drain excess fat.
  3. Mix the cooked sausage with salsa and some of the cheese in a bowl.
  4. Heat potatoes in the same pan, then combine with the sausage mixture.
  5. Fill each tortilla with about 1/8 of the filling, roll tightly, and place seam-side down in the baking dish.
  6. Whisk together eggs, half-and-half, flour, and salt; pour over rolled tortillas.
  7. Top with remaining cheese and cover with foil.
  8. Bake for approximately 35 minutes covered, then remove foil and bake another 10 minutes until set.
