  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon vanilla extract
  • 1/2 cup granulated sugar (for fruit mixture)
  • 1/4 cup all-purpose flour (for fruit mixture)
  • 1/2 cup all-purpose flour (for crumble topping)
  • 1/2 cup old-fashioned oats
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar (for crumble topping)
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 6 tablespoons cold butter (diced)

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, mix together blueberries, sliced peaches, lemon juice, lemon zest, vanilla extract, granulated sugar, and flour until well combined. Allow to sit.
  3. In another bowl, combine all-purpose flour, oats, brown sugar, granulated sugar, salt, and cinnamon. Mix well and then add cold butter; use fingers to create crumbles.
  4. Pour the fruit mixture into a baking dish and evenly sprinkle the crumble topping over it.
  5. Bake for 40-45 minutes until golden brown and bubbly.
