  • 1 tablespoon olive oil
  • 1/2 tablespoon granulated sugar
  • 1 minced garlic clove
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 2 cups farro, cooked
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup pine nuts
  • 1/4 cup mixed fresh herbs, such as parsley, chives, oregano
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons sparkling grape juice vinegar
  • 1 1/2 tablespoons honey
  • 2 garlic cloves, finely minced or crushed
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup olive oil, extra virgin

Instructions

  1. Preheat oven to 400°F (200°C). In a mixing bowl, combine halved tomatoes with olive oil, sugar, minced garlic, salt, pepper, and thyme.
  2. Spread the mixture on a baking sheet lined with parchment paper and roast for about 30 minutes until caramelized.
  3. Cook farro according to package instructions; typically simmer for 30–40 minutes until tender.
  4. Toast pine nuts in a dry skillet over medium heat for about 5–7 minutes until golden brown.
  5. In a small bowl, whisk together lemon juice, sparkling grape juice vinegar, honey, minced garlic cloves, salt, pepper, and olive oil to create the dressing.
  6. In a large bowl, combine roasted tomatoes, cooked farro, toasted pine nuts, feta cheese, and mixed herbs. Drizzle with dressing and mix gently.
