  • 2 pounds Yukon Gold potatoes
  • 4 tablespoons salted butter (or non-dairy butter)
  • 3/4 cup half & half or full-fat coconut milk
  • 4 yellow onions (sliced)
  • Fresh herbs: chives, thyme, sage
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt

Instructions

  1. Slice onions thinly and caramelize them in a skillet with olive oil over medium heat for 40-50 minutes until golden brown.
  2. Wash and chop Yukon Gold potatoes into small pieces; boil them in salted water for about 20 minutes until fork-tender.
  3. Drain the cooked potatoes and mash them until smooth.
  4. Mix in butter, half & half (or coconut milk), and kosher salt; combine well.
  5. Stir in half of the caramelized onions and grated Parmesan cheese until blended.
  6. Serve warm topped with remaining caramelized onions and fresh herbs.
