  • 2 pints cherry or grape tomatoes
  • 1 zucchini (sliced)
  • 1/2 sweet onion (diced)
  • 4 cloves garlic (minced)
  • 1/2 cup olive oil
  • 1/2 tablespoon garlic powder
  • 1/4 tablespoon crushed red pepper flakes
  • Salt and black pepper to taste
  • 1 block feta cheese (drained)
  • 1 pound pasta (your choice)
  • Fresh basil for garnish
  • Grated parmesan cheese for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, combine tomatoes, zucchini, onion, and garlic. Drizzle with olive oil and sprinkle with garlic powder, crushed red pepper flakes, salt, and pepper. Toss until well combined.
  3. Create a space in the center of the mixture for the feta cheese and place it there; drizzle more olive oil on top if desired.
  4. Bake for about 40 minutes until vegetables are tender and feta is golden.
  5. While baking, cook pasta in salted boiling water according to package instructions until al dente. Reserve some pasta water before draining.
  6. Once baked, stir the vegetable mixture and feta together. Add cooked pasta and fresh basil. Use reserved pasta water if needed to adjust consistency.
  7. Serve warm topped with grated parmesan cheese.
