  • 23 pounds center-cut beef tenderloin
  • 1 1/2 pounds mushrooms (button, cremini, shiitake, portobello)
  • 12 thin slices turkey
  • 2 Tablespoons olive oil
  • 2 Tablespoons dijon mustard
  • Flour for rolling out puff pastry
  • 14 ounces frozen or homemade puff pastry (thawed)
  • 2 medium shallots (roughly chopped)
  • 2 teaspoons fresh thyme leaves
  • 4 cloves garlic
  • Kosher salt and freshly ground black pepper
  • 1 large egg (beaten)
  • 1/2 teaspoon flaky or coarse sea salt
  • 1 bunch finely minced chives

Instructions

  1. Season the beef tenderloin generously with kosher salt and black pepper. Heat olive oil in a skillet over high heat. Sear the beef on all sides until browned (about 3 minutes each side). Remove from heat and brush with dijon mustard. Let cool.
  2. In the same skillet, add butter and olive oil over medium heat. Add shallots and sauté until translucent. Stir in chopped mushrooms, thyme leaves, garlic, salt, and pepper. Cook until moisture evaporates. Allow the mixture to cool before mixing with turkey slices.
  3. Roll out puff pastry on a floured surface into a rectangle large enough to envelop your beef. Layer turkey slices down the center of the pastry followed by mushroom filling. Place seared beef on top of mushroom filling.
  4. Fold pastry over beef tightly; seal edges using your fingers or a fork. Brush with beaten egg; sprinkle with sea salt.
  5. Preheat oven to 400°F (200°C). Place wrapped Beef Wellington on a baking sheet lined with parchment paper. Bake for approximately 40–50 minutes or until pastry is golden brown.
