  • 2 1/4 to 2 1/2 pounds organic beef chuck roast
  • Salt and black pepper
  • Olive oil
  • 1 onion, diced
  • 2 carrots, peeled and sliced into medium-large chunks
  • 2 ribs celery, sliced into medium-large chunks
  • 1 large parsnip, peeled and sliced into medium-large chunks
  • 6 cloves garlic, pressed through garlic press
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon dried thyme
  • 1 tablespoon tomato paste
  • 1/2 cup apple vinegar
  • 2 cups beef stock
  • 8 ounces yellow baby potatoes, halved or quartered
  • 3/4 cup petite frozen peas, thawed
  • 1 sheet puff pastry
  • 1 egg yolk, whisked for egg wash

Instructions

  1. Preheat oven to 400°F. Gather all ingredients.
  2. Season beef with salt, pepper, and paprika; toss with flour.
  3. In a Dutch oven over medium-high heat, sear the beef until browned. Remove and set aside.
  4. Sauté onion, carrots, celery, and parsnip in the same pot until softened.
  5. Add garlic, seasonings, tomato paste; stir to combine.
  6. Pour in apple vinegar; allow bubbling before adding seared beef back into pot along with stock and potatoes.
  7. Simmer uncovered for about 2 1/2 hours until meat is tender; stir in peas before cooling slightly.
  8. Roll out thawed puff pastry; cover filling in baking dish and brush with egg wash.
  9. Vent the pastry by cutting slits on top before baking for 30-35 minutes until golden brown.
