  • 3 1/2 cups icing sugar (for frosting)

Instructions

  1. Preheat your oven to 275°F (135°C) and grease a 9×13-inch pan.
  2. In a small bowl, mix mashed bananas with lemon juice and set aside.
  3. In another bowl, combine flour, baking soda, and salt; set aside.
  4. Cream softened butter and sugar until fluffy in a large bowl.
  5. Add eggs one at a time, mixing well after each addition along with vanilla extract.
  6. Gradually incorporate the flour mixture alternately with buttermilk into the butter mixture.
  7. Stir in the banana mixture until just combined.
