  • 2 large chicken breasts
  • 4 ounces cream cheese
  • 3/4 cup heavy cream
  • 4 cloves garlic
  • 8 ounces sun-dried tomatoes
  • 3/4 cup fresh spinach
  • 1/4 cup Parmesan cheese
  • 3/4 cup mozzarella cheese

Instructions

  1. Preheat the oven to 400°F (204°C).
  2. Slice chicken breasts horizontally to create thin fillets; season with salt, pepper, and half the minced garlic.
  3. In a bowl, mix softened cream cheese with heavy cream until smooth. Add remaining garlic, onion powder, paprika, Italian seasoning, salt, pepper, Parmesan cheese, and half the mozzarella; blend until combined.
  4. Spread the sauce over the chicken in a baking dish. Top with reserved sun-dried tomato oil and chopped tomatoes.
  5. Cover with foil and bake for 20 minutes until chicken reaches 165°F (74°C).
  6. Stir in spinach and add remaining mozzarella; bake uncovered for an additional 10 minutes until melted.
  7. Allow to rest briefly before serving.
