  • 1/2 cup olive oil
  • 1 block feta cheese (8 oz)
  • 1 lb pasta (such as rotini or orzo)
  • 10 leaves fresh sage
  • 3 cloves garlic
  • Hot honey (or regular honey)

Instructions

  1. Preheat your oven to 400°F.
  2. Toss butternut squash with olive oil, salt, and pepper; place in a baking dish with feta at the center. Drizzle with more olive oil and bake for 30 minutes.
  3. Increase oven temperature to 450°F and bake until feta is lightly browned (5–10 minutes).
  4. Cook pasta in salted water until al dente; reserve 2 cups of pasta water before draining.
  5. Mix roasted squash and feta with minced garlic, sage, hot honey, cooked pasta, and one cup of reserved pasta water until well combined.
  6. Adjust creaminess by adding more reserved pasta water if needed.
