  • 5 tablespoons pure canned pumpkin
  • 1 tablespoon apple juice
  • 3 tablespoons granulated sugar
  • 2 tablespoons light brown sugar
  • 1 large egg yolk
  • ½ teaspoon vanilla extract
  • ½ cup fresh apple, diced
  • ¾ cup all-purpose flour
  • ¼ teaspoon baking soda
  • ¾ teaspoon pumpkin pie spice
  • 3 tablespoons all-purpose flour (for streusel)
  • 1 ½ tablespoons unsalted butter, cold and cut into cubes (for streusel)
  • 1 ½ tablespoons light brown sugar (for streusel)
  • 2 teaspoons granulated sugar (for streusel)
  • pinch salt (for streusel)
  • ¼ teaspoon ground cinnamon (for streusel)
  • 1 ½ tablespoons diced apples (reserved for streusel)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with paper liners.
  2. In a bowl, mix streusel ingredients: flour, cold butter, sugars, salt, cinnamon, and diced apples until crumbly. Set aside.
  3. In another bowl, whisk together the sour cream, pumpkin, apple juice, sugars, egg yolk, and vanilla.
  4. In a separate bowl, combine flour, baking soda, salt, and pumpkin pie spice. Gradually add to the wet mixture until just combined.
  5. Fold in the diced apples gently.
  6. Distribute batter among muffin cups and top each with streusel.
  7. Bake for about 18 minutes until a toothpick comes out clean. Cool before serving.
