  • 1 1/2 cups all-purpose flour
  • 1 cup unsalted butter (room temperature)
  • 3 cups rolled oats
  • 1 cup light brown sugar (packed)
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 2 large eggs (room temperature)
  • 4 tsp light brown sugar (for caramelized apples)
  • 2 tsp unsalted butter (for caramelized apples)
  • 1/4 cup granulated sugar
  • 1/2 tsp salt
  • 1 Tbsp water (for icing)
  • 1 cup powdered sugar (for icing)

Instructions

  1. Begin by caramelizing the apples. In a skillet over medium heat, melt butter and add diced apples with brown sugar. Cook until the apples are soft and caramelized, about 5-7 minutes. Remove from heat and set aside to cool.
  2. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  3. In a mixing bowl, combine flour, baking soda, ground cinnamon, and salt.
  4. In another bowl, cream together room temperature butter with both sugars until fluffy. Mix in eggs one at a time along with vanilla extract.
  5. Gradually add dry ingredients to the wet mixture until just combined. Gently fold in rolled oats and cooled caramelized apples using a rubber spatula.
  6. Drop spoonfuls of dough onto the prepared baking sheet and bake for 12-15 minutes or until golden.
