  • 20 tablespoons unsalted butter
  • 2½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cornstarch
  • 1 large egg
  • 1¼ cup light brown sugar
  • ¼ cup granulated sugar
  • 2 teaspoons apple pie spice or pumpkin spice
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons apple cider (not reduced)
  • ¾ cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 cup powdered sugar
  • ½ teaspoon vanilla extract
  • 12 tablespoons apple cider (not reduced)

Instructions

  1. Reduce apple cider in a saucepan over medium-high heat until it thickens to about ¼ cup; let cool.
  2. Melt butter on low heat until browned; cool for 15 minutes.
  3. Whisk together flour, baking powder, baking soda, cornstarch, spices, and salt in a bowl.
  4. Mix sugars with cooled brown butter; add egg and reduced apple cider until smooth.
  5. Combine wet and dry ingredients until just mixed; let dough rest while preheating oven to 375°F (190°C).
  6. Scoop dough onto lined baking sheet and bake for 9–11 minutes until set.
  7. Cool cookies briefly before coating them in melted butter mixed with apple cider and rolling them in cinnamon sugar.
