  • 2 pounds small new potatoes (Yukon Gold or red bliss)
  • 1/2 cup pitted Kalamata olives, halved
  • 1/4 cup pitted green olives, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup finely chopped fresh parsley
  • 2 tablespoons finely chopped fresh dill
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Wash the potatoes and cut larger ones into halves or quarters for even cooking.
  2. In a large pot, cover potatoes with cold water and add salt. Bring to a boil and then simmer until tender (15-20 minutes).
  3. Drain the potatoes and let them cool slightly in a colander.
  4. Meanwhile, whisk together olive oil, lemon juice, vinegar, mustard, garlic, salt, and pepper in a small bowl.
  5. In a large mixing bowl, combine cooled potatoes with Kalamata olives, green olives, feta cheese, parsley, and dill.
  6. Pour dressing over the potato mixture and gently toss to coat evenly.
  7. Adjust seasoning if necessary and serve immediately or chill for at least 30 minutes.
