  1. Boil peeled and quartered potatoes in salted water until fork-tender (15-20 minutes). Drain well.

  3. Cool the mixture completely in the refrigerator.
  4. Set up three shallow dishes: one for flour, one for beaten eggs, and one for panko mixed with seasonings.
  5. Scoop cooled mashed potatoes into balls (1-2 tablespoons each), roll in flour, dip in egg, then coat with panko.
  6. Preheat the air fryer to 400°F (200°C) and spray the basket with cooking spray.
