  • 2 cups cooked jasmine rice (cold & day-old)
  • 1 green onion (finely chopped)
  • 2.5 tbsp soy sauce (or light soy sauce)
  • 1/2 tbsp sesame oil
  • 4 large eggs (beaten)
  • 2 tbsp vegetable oil

Instructions

  1. Heat vegetable oil in a large pan or wok over medium-high heat.
  2. Pour in beaten eggs and stir-fry until just set but still moist.
  3. Add cold jasmine rice and break apart any clumps gently.
  4. Sweep mixture to one side of the pan; add chopped green onions to the empty side, then mix everything together.
  5. Drizzle soy sauce and sesame oil around the edges of the pan; toss thoroughly until well-coated.
