- 2 cups cooked jasmine rice (cold & day-old)
- 1 green onion (finely chopped)
- 2.5 tbsp soy sauce (or light soy sauce)
- 1/2 tbsp sesame oil
- 4 large eggs (beaten)
- 2 tbsp vegetable oil
- Heat vegetable oil in a large pan or wok over medium-high heat.
- Pour in beaten eggs and stir-fry until just set but still moist.
- Add cold jasmine rice and break apart any clumps gently.
- Sweep mixture to one side of the pan; add chopped green onions to the empty side, then mix everything together.
- Drizzle soy sauce and sesame oil around the edges of the pan; toss thoroughly until well-coated.
